One of my favorite desserts to make all year long just happens to be perfect for Passover. Not only because it lacks any leavening — and is light as air, elegant enough for entertaining and totally make-ahead. But also because it’s an alchemy of eggs, which locavores know have a season, and it’s right now. So even if you have your Passover catered (like in this hilarious episode of High Maintenance) be sure to keep dessert duty to yourself.
