Miracle of the Eggs: Pavlova Is Perfect for Passover

One of my favorite desserts to make all year long just happens to be perfect for Passover. Not only because it lacks any leavening — and is light as air, elegant enough for entertaining and totally make-ahead. But also because it’s an alchemy of eggs, which locavores know have a season, and it’s right now. So even if you have your Passover catered (like in this hilarious episode of High Maintenance) be sure to keep dessert duty to yourself. Get thee to the Greenmarket, fire up your bobeshi’s mixer and make this recipe, which is magical enough to make anyone believe in miracles.
