The Department for Germanic Languages and Literatures at Columbia University Presents The New Nordic Cuisine in New York City

At this one-day symposium on the New Nordic Cuisine movement, scholars, entrepreneurs and artisans from the Nordic countries and the local community will discuss a broad range of issues including local ingredients, environmentally conscious food production and the aesthetics of food consumption.  Session one includes academic presentations on topics such as the New Nordic food philosophy, the (re)creation of the Nordic terroir and its ingredients, the theatrics of consumption of food, interior design and the branding of the Nordic globally.  The second session is reserved for talks and workshops by local entrepreneurs and artisans inspired by the New Nordic Manifesto.
