In honor of New York Oyster Week, a celebration of the history, culture, and taste of the food world’s favorite briny bivalve, The James Beard House has invited two industry veterans – Chef Ken Norris of Clutch Prime Sausagery in Portland, OR and JBF Award-winning Cookbook Author and Television Personality David Rosengarten – to prepare a face-off between East and West Coast species. May the best OyStar win!

Hors d’Oeuvre

  • Raw Oyster Bar > Atlantic Oysters with Watermelon–Yuzu Mignonette and Pacific Oysters with Cucumber, Lime, and Celery Granita
  • Pacific Red Sea Urchin, Quail Egg, and Tomato Water–Smoked Jacobsen Sea Salt Shooters

Dinner

  • Maryland Crab Salad with Virginia-Grown Yellow Fatalii Chiles, Corn Nuts, and Housemade Crab House Spice
  • Beet-Cured Chinook Salmon with Shaved Brussels Sprout–Horseradish Salad and Candied Bacon
  • New England Seafood Chowder with Oysters, Softshell Clams, White Maine Potatoes, and Fennel 
  • Butter-Poached Columbia River White Sturgeon with Netarts Bay Oyster Crépinette and Harvest Greens 
  • Theo Dark Chocolate, Cashew, and Smoked Caramel Tartlet
  • A selection of fine wines will be served with this dinner.
