Once upon a time, Goose Island’s award-winning Brewmaster Greg Hall traipsed across the pond for a tour of England’s breweries. What he discovered was a world almost unknown in the United States ten years ago–the world of artisinal cider-making. What the English had, Greg Hall wanted ,and after leaving Goose Island in 2011, he began his own cider company named Virute Ciders. Based in Chicago, Illinois, Hall sources heirloom apples from local family farms and creates old farmhouse-style ciders with modern methods of fermentation and aging. During a swift visit to the Big Apple (pun intended), Greg will walk you through the steps of cider-making and the myriad flavors craft cider presents. A seasoned Murray’s expert will be on hand to pair Virtue’s much buzzed-about libation with cheeses sure to please.
