According to the organizers:

Michelin-starred chef Mads Refslund, an initial partner at Noma, and Tama Matsuoka Wong, a forager for Refslund and Daniel Boulud, share their secrets for using local ingredients in a sustainable, no-waste fashion without sacrificing flavor. Using scraps from vegetables, fruits and animal proteins — food that would normally go to waste — they explain how to create beautiful and accessible home-cooked dishes without sacrificing anything to flavor. There will be a book signing following this event.
