Each student will have two fish to practice on and will learn to gut, clean, de-scale, remove skin and bones, and fillet a flat fish. At the end of the class, we will enjoy a tasting of our freshly filleted fish and students can take home their fish to show off to friends. The skills learned will allow you to buy whole fish from the market instead of pre-cut fillets and portions. Cooking with whole fish is not only fresher and better tasting, but is also more sustainable.
