As part of our continuing series in which we cook from our favorite cookbooks, this month, we explore Claudia Roden’s deliciously evocative Arabesque (Knopf). With a stunning array of traditional and contemporary dishes from Morocco, Turkey, and Lebanon, Roden’s book leads us through the colors and flavors of this intriguing culinary region.

On the Menu: Creamy Fillo Spinach Pie; Chickpeas with Toasted Bread and Yogurt; Chicken with Caramelized Baby Onions and Pears; Eggplants with Tomatoes and Chickpeas; Yogurt Cake.
