From September 26th to October 6th Edible Manhattan, Edible East End and Edible Brooklyn — in conjunction with Edibles statewide and GrowNYC — present Eat Drink Local week, our celebration of the local food chain through heirloom vegetable auctions, wine tastings, DIY challenges, lectures, garden tours, farm to table dinners and countless other events. Over the next few weeks we’re highlighting a few of the restaurants, wine shops and wineries, breweries and beer bars, farms and food artisans and cultural institutions that the week is meant to celebrate.
The Cleaver Company
What It Does:
While other celeb-locavore chefs have made green dining trendy, Mary Cleaver’s Cleaver Company was one of the first, and also tackles a ubiquitous, oh-so-New-York-City subculture that isn’t always on board with paying more for sustainablity: the catered affair. The Cleaver Company serves sustainable, local and always delicious food at catered events around the city (including some of ours), and they also show off their stuff at The Green Table, their sliver of a restaurant in front of the catering kitchen in The Chelsea Market.
Why We Love It:
The Cleaver Company is the decades-old brainchild of self-taught chef Mary Cleaver, who is about as passionate about bringing seasonal, local and delicious food to New Yorkers as a chef can be. For 30 years, and well before it was cool or profitable, Cleaver Company has shown ordinary New Yorkers how to put their money where their morals are, without sacrificing taste. She brings the latest, greatest green and locavore cooking practices to the masses, changing their minds through their palates and plates at weddings, corporate parties and other events. Where to Find Her:
The Cleaver Company kitchen resides in the Chelsea Market behind The Green Table, Cleaver’s righteous restaurant where you can sample many of her sustainable creations at prices that won’t break your biodegradable piggy bank. (The best seats in the house, in our opinion, aren’t the rustic farm tables outside but the three-seat bar where you can order Mary’s outstanding burger and a perfect craft pint.)
